I found 6 chicken thighs at the bottom of the freezer.
A couple of them looked like they had been there a while!
Microwaved at 1/2 power to thaw so I could chop them.
Here's what I found in the fridge.
1/4 onion (fresh)
1 Green bell pepper
1 floppy carrot
1 broccoli top
1 (very soft zuchini
1/2 celery stalk
10 asparagus spears
A hand full of green beans
and a NASTY looking tomato (but not moldy)
OK you should start the chicken BEFORE the vegetables but I screwed up. I got mad and just threw the chicken in with the veggies
Hey I found a can of artichoke hearts...Let throw them in with the chopped fresh vegetables
The chicken and veggies are cooking well, I added some pepper and some cajun seasoning. (see quiche gallery)
You might want to use salt... I don't
I cooked the pasta and have about 2 quarts
Raw vegetables about 2 quarts
Cooked vegetables with chicken about 1 quart
My brain says that's 5 quarts!
Which is about 3 quarts MORE than this pan will hold!
Ya this pan will work!

I had one jar of red sauce but when mixed it with everything it didn't look like enough sauce so I threw in a can of V8 juice
Don't look at me like that...Its tomato sauce..sort of?

I also added, some powered garlic and some italian seasoning
It was a little dry but I was hoping the fresh vegetables would add some juice to the mixture as they cook.
Oh my GOD! the smell has the neighbors knocking on my door asking if they can eat here tonight!
This is after about 45 minutes at 350 deg.
The vegetables DID add juice and now its perfect!
I put the asparagus spears on top with a little shredded cheese and the rest of the fresh parm I had left over from yesterday. (herb bread day)
Way in the back of the fridge I found a bowl of Kalmata olives that have been there FOREVER so I said what the hell...
Threw them on top and put it back in the oven.
30 minutes later...Ta'Da Dinner for two.
Ok maybe two dozen but I did clean the fridge out!
