2/3 TB sp Melted unsalted butter
1/2 cup sugar plus a bit for dusting.
5 oz Bitter sweet Choc.
2 oz Semi sweet Choc.
1 & 1/3 cups milk.
6 large egg yokes.
8 large egg whites.
6 TB sp flour.
2 TB sp Amaretto De Amore
(4TB if you sick and twisted like me)
1 t sp Vanila extract
pinch salt
pinch Cream of Tartar
Tie a parchment paper collar on to the souffle dish.
Coat the dish AND the paper with melted butter and sprinkle sugar all around, then put the dish in the freezer for 15 min.
(The sugar on the sides makes the sides course and gives traction to the souffle as it climbs up the sides)
I didn't have a double boiler so I filled a Wok with water and set this pan inside. (works great)
Beat the egg yokes and 6 TB spoons of the sugar beat for about 4 minutes or untill pale in color
Add a little of the hot milk to the egg yokes and beat
repeat
repeat
repeat till you have 1/2 the milk in the eggs.
Dumping the egg mixture into the hot milk will cook the eggs so you need to raise the temp of the eggs slowly.
When 1/2 the milk is in the eggs then you can pour this mixture into the rest of the milk. Still well and cook for about 2 min ( untill thick)
The milk sould be on med or low heat.
The chocolate should be melted by now so go ahead and add the vanilla extract and the Amaretto, stir well.
Now we add the egg/milk mixture into the chocolate.
I did this on the counter as no more heat is needed.
While the Choc mixture cools a bit whip up your egg whites with the rest of the sugar and a pinch of cream of Tartar.
Stiff peaks should hold thier shape well.
Now transfer the choc mixture to a large bowl and slowly
SLOWLY fold 1/3 rd of the egg white into the choc. when that is blended well add another 1/3 and fold slowly keep going almost there.
Fold in the last 1/3 till blended well.
FOLD (do not stir)
Gently pour this into your souffle dish.
Put in preheated oven at 400 deg and cok for 15 min
reduce heat to 375 and cook for anoher 15 min
or untill firm
Cut the string and remove the paper collar and there you go.
